DIY - Apple Cider (苹果醋) / Vineger The Making

This is to share with you, the making of fruit vinegar. In fact, it does not have much difference from fruit enzyme making. Basically, it require an additional ingredient, which is rice or brown rice vinegar.

Below are some making methods, extracted from some Chinese websites.


苹果醋的制作方法:

首先将苹果洗干净;

再将苹果自然晾干或用干净的布擦干;

把苹果全部都拿来切片;

然后一层苹果一层冰糖放入干净的玻璃罐里(1斤苹果4两冰糖的比例);

最后就是等待冰糖融化、把苹果的水份分离出来。

据说这种自然发酵的方式会先变成苹果酒,成醋要等上一年,如果想要加速制程可以等1~2个月左右再倒入纯糙米醋,千万不要把醋和苹果一同加入,这样口感才会好。

The making of Apple Cider

  1. 1) Wash apples and make sure its been air dried.
  2. 2) Cut apples into slices.
  3. 3) Place layer of apples slices into a jar, add on brown sugar or rock sugar layer by layer (1kg apple to 4oc of rock sugar.
  4. 4) After fragmented, probably 2-3 weeks, it will turn into enzyme and further on liquor. Sieve apple out, keep it for up to 1-2 year to turn it into vinegar.
  5. 5) To enhance vinegar making process, you could add on brown rice vinegar after the juices being sieved away from the slices of fruits.

柠檬醋苹果醋的做法

比例

柠檬(斤):醋*(瓶):冰糖=333

苹果(斤):醋*(瓶):冰糖=332

注意:可使用米醋或有机糙米醋。

做法:

1.柠檬或苹果洗净沥干,连皮切片后,置于玻璃瓶中。

2.放入适量冰糖。

3.倒入适量醋。

4.紧锁瓶盖,置于阴凉处约30天即可。

用法:

5~8倍温开水(冬日),或冰开水(夏日)稀释之,餐后饮用,养颜美容,去除口腔异味,帮助消化。

注意:青年男女适用,但糖尿病患者忌之。


Lemon Vinegar / Apple Vinegar The Making


Ingredients:

Lemon (kg) : Vinegar (bottle) : Rock Sugar = 3 : 3 : 3

Apple (kg) : Vinegar (bottle) : Rock Sugar = 3 : 3 : 2


Methods:

  1. 1) Wash and dry lemon/apple. Slice (with skin) and place them in a jar
  2. 2) Add rock sugar
  3. 3) Add vinegar
  4. 4) Close the jar and place at cool dry place for 30 days
